It is said that the baking of Mimi and Nico Saintville "tempts the Protestants and seduces the Catholics”. And that is no wonder. It is not only the crisp "baguette" and the soft "croissant" that tempt customers but most of all the "spécialitées" . Mayor Victor Domont for example, cannot please his three year old daughter Virginie more than to buy her a “Millefeuille", which oozes cream from all sides when you bite into it. Géraldine, the pretty daughter of water miller  André Draveil, who brings a barrowful of flour to the bakery everyday, always enjoys a "Madeleine", a shell of Muscovite pastry given to her by Mimi.

Mimi thinks she deserves it because it is such a long way from the mill to the bakery. And the girl has no affinity whatsoever with the profession inherited from her father and wants to be a writer.  Nico hopes she will give up this resolution, where will he get his flour from otherwise? Lighthouse keeper Jacques Le Perray also likes to treat his three children with something tasty made by Mimi and Nico. "Paris-Brest " is their favourite, a delicious pastry filled with praline cream and covered with almonds and sugar.

And when Nico has deposited his profits into his account at Philippe de Moissy’s bank at the end of the week, he treats himself to a  "canelé", a small pastry in the shape of a pillar, flambéed with old rum and served will vanilla ice cream.
