As many as fifteen cows graze on the meadowland of Vincent and Marjorie Forbach’s farm. Their farm is located on the edge of Ville de Reidy and the meadow slopes from the stalls upwards into the mountains. In the winter, when the mountains are sometimes covered in snow for weeks at a time, the cows shelter warmly together in the straw in the stall, making milking-time much easier. All four Forbach children have to help in the huge task of milking the cows, and this has to be done twice a day!
Sometimes their friends come and help, such as the sons of Francois Stirner from the wine shop, or the daughters of "monsieur le docteur". The wine shop is also one of the biggest customers of the dairy farm; on the other hand Vincent Forbach is a great enthusiast of Stirner's "Pinot Noir". On the farm itself, large amounts of the typical Alsace "Münsterkäse" are produced as well as smaller amounts of the "Ribeau Pierre".
Customers preferring goats cheese can also be served by the Forbachs. They buy stocks from goat farmers in the mountains and sell them in the town. Tourists prefer something familiar than something typical of the region. But the culinary establishments in the town do, of course, love the typical regional cheeses and all include them on their menu. Restaurant Chez Gwendoline even has all the cheeses assembled together and customers are able to choose these as a dessert. The Forbach's milk is of very high quality. Stéphanie and Clement Felbach from "le Boulangerie Stéphanie" only use the Forbach’s milk in their bakery. They claim it gives their cakes an extra creamy taste.
