"The truth is in the wine" according to Francois and Julie Stirner. This is why they named their "Caveau Degustation" "In Vine Veritas". Their wine shop is located above a large cellar, in which the wines spend the last few weeks ripening in oak-wood barrels, if the local wine farmers consider them worthy of being transported. And because the region is becoming famous throughout Europe for its excellent wines, they make sure they always have a large stock in barrels, so they can fill the bottles themselves.
The most famous of all is of course the Riesling, the region’s best wine. Dry and full of character. Yvette Bayon from Hotel de Ville is a major buyer of this very wine. Christian Thion, who runs the "Kaysers Bar", has a strong preference for the "Gewurzstraminer" and in particular that of 1948, because this one contains more alcohol and has a heavy aroma.
But Francois' cellar also contains a barrel full of "Sylvaner", a barrel of "Tokay Pinot Gris", which he appreciates very much himself for the power of its aroma, and for the enthusiast a barrel of the noble "Pinot Noir", an elegant wine with cherry aroma. Because wine and cheese is usually a wonderful combination, Francois and Julie have a contract with Vincent and Marjorie Forbach from the dairy farm, for the supply of a wide range of cheeses, these are not of course all made by the Forbachs themselves, but they do always intermediate in purchasing them. The Stirners consider the "Ribeau Pierre" in particular to be an excellent accompaniment to the "Riesling", although opinions are divided about this. Their growing sons Theo and Clement have also shown an interest, albeit through their games in the secretive dark cellar.
